We mellow it out with a touch of real marshmallow (not a flavouring or syrup). Not to make it sweet, but to round the edges. It adds a gentle, creamy softness that tricks your palate into thinking it’s sweeter than it is.
(It isn’t — there’s less than half a marshmallow in a standard drink.)
The result is a gin that’s dry, balanced and surprisingly smooth.
